In SharePoint online notebook is the default feature present in Quick launch bar it has been created automatically when you are creating new site collection. Here you will see how to remove Notebook from Quick Launch bar in SharePoint Online.
Steps
Go to office 365 portal and logged in SharePoint site.
Now click on gear icon to select Site settings option.
In Site Settings page click on manage site features under Site Actions.
Now search for Notebook feature and deactivate it.
Go to your Site home page see on Quick launch bar you will see notebook option will not visible on quick launch.
